I only do 1080p editing and it works just fine. You will most likely be able to do more on a Pro 8. Light editing is no problem with less than 5 masks in Lightroom CC or less than 10 layers in Photoshop. Having both open at the same time is doable, but not as good as my 32GB RAM desktop machine. Lightroom CC by itself will regularly max out my 8GB of RAM, and I'll often edit specific photos in Photoshop. You will absolutely want at least 16GB of RAM. I have my desktop machine that I primarily do editing on, and I have the Pro 6 as a secondary/mobile editing device. I purchased my Pro 6 i5/8GB/256GB exactly for this purpose.
